Discover how to eat seasonally and locally with Jose Matamoros, Chef de Cuisine, at 1Kitchen at Toronto's 1Hotel. An expert in designing menus focused on local and sustainable farm-to-table cuisine, Jose will teach your team how to shop locally and cook seasonably. Keeping accessibility in mind, we’ll discuss tips and trick on how to find reasonably priced local produce.
Learn how the average meal travels 1,200 kilometres from the farm-to-plate and discuss tips on finding and using food grown locally.
Meet your Chef: Jose Matamoros
Born in Mexico, José Matamoros has worked in kitchens across Italy, France, and Canada. Upon opening Guelph’s “La Reina”, he worked as Senior Sous Chef at El Catrin in Distillery District, arguably the biggest and busiest Mexican restaurant in Canada. He’s recently taken the position of Chef de Cuisine at 1Kitchen at Toronto’s 1Hotel.
